Damn and I don't have a Dog yet!
Well, we've been locked down here in the state of Maryland so the Women of Wine Making group has had to forgo their weekly fix of visiting, making wine, tasting wine and catching up with each other. So I've committed to push the kits through (not all that big a deal, especially since most of them are mine) - I'm the white lady!!
I went over today and pushed most of them the through to the next steps.
Winexpert LE19 Limited Edition Pacific Quartet Red (100% Michele). Racked off sediment but really just waiting to clear and bottle. 42 day wine so bottling ~ 4/17
Winexpert Eclipse NZ Marlborough Sauvignon Blanc (100% Betsy) - Left alone - needs a rack but was busy with other stuff - looks like it's going to be a hard clear. Will keep an eye on it. Might rack this week. By the calculator the bottling should be Friday, April 17, 2020. I need to get on some clearing ideas.
Winexpert Vintners Reserve Viognier ( 100% Betsy) - the SG was just above the point at which we needed to stabilize ( 0.996 vs it was supposed to be blow that point), so I made an executive decision and did what we used to call secondary fermentation. I just racked it over to a carboy, so that maybe the fermentation will finish. And quite frankly before I left the workshop it had started bubbling. Bottling should be 4/17 if it clears like it should. Winexpert Island Mist Peach Apricot Chardonnay (100% Betsy) - vacuumed racked - Now that I know about the vacuum regulator and what the degasser attachment is for (after I found that piece on the floor) . DUH! A BIG DUH! Hardly any additional degassing needed - in fact I thought the pump wasn't working. Added sulfites and Kieselsol. F-pack and Chitosan tomorrow! Bottle Friday, April 17, 2020, supposedly, but this one usually clears fine. RJS En Primeur Australian Pinot Noir (50% Betsy, 50% Barbara) - I had added Pectinase on 3/30/20 and will start to degass, stabilize and clear tomorrow or the next day. 42 day wine so target bottling is 4/24
RJS En Premier Chilean Chardonnay (100% Betsy) - Racked, degassed, stabilized, cleared and vacuumed down. Will probably need a rack or two but should be ready to bottle on the Friday, May 8, 2020, if it clears as it should.
I'll go over tomorrow and finish the 2 step clearing on a couple and check the pinot and the viognier for the next step. I need to keep a eye on the temperature because the spring can be rough to make sure it's warm enough but not too warm.
