Working My Way Through the Carboys

Over the last week, Tom and I have bottled the Peach Chardonnay, Viognier and the Eclipse Sauvignon Blanc. They have been racked in the basement and all is well. The three left are the Pinot Noir, Red Pacific Quartet, and the Chilean Chardonnay. I added Chitosan to the chardonnay on Saturday because it wasn't clearing, but haven't been back to look - I got caught up in the garden while the weather was good and getting ready for the new pup.

It's a dreary morning so I'm going to start getting bottles ready for the 2 reds, and check on the chard today. I racked the 2 reds today so that the bottling will be cleaner, and the chard is looking better - there was junk on the sides that a good twist took care of.

The Pacific Quartet Red is Michele's and I have bottles ready, but just checked to see if she wants it in small bottles. I probably need to check if I have small red bottles?? But I'll bottle what I can in what I have.

So hopefully, while Tom is dealing with the grocery shopping tomorrow, I'll get one or both of the reds bottled. Also am going to start the Chianti's - I think there are 2. and they should be able to be finished before the orchard and the garden hits me full force. Probably start the Port - we are getting low on that, and asked Barbara what she wanted me to start - since she has the remaining kits. Looks like we'll have 2 that overwinter, depending on which Barbara wants me to start.

I think I'm going to try and keep puppy out of the workshop until we have the housebreaking done at the big house. It would just be too much to try and do wine and keep an eye on him.
