Follow-up on Processing Wine during the Pandemic

I guess Michele is looking for the wine delivery!!! But while she is looking for the new wine, I know she has some stored up for a rainy day - or a pandemic month. Things are quiet here on the Ranch. Getting the seeds, orchard and chemicals organized. I can't just run over to Charlotte Hall for sprays. Just found out that the electric fence controller is done for. Tom has one on order, but it will take another 10 days - guess it's shotgun time for the squirrels. Maybe I'll try the 22???


But in the meantime the wine has to be moved along! There were a couple things that needed to be finished up.


  • Winexpert LE19 Limited Edition Pacific Quartet Red (100% Michele). Left it sitting. Looks good and probably will need another rack. 42 day wine so bottling ~ 4/17 looks doable.

  • Winexpert Eclipse NZ Marlborough Sauvignon Blanc (100% Betsy) - Going through all the bags and labels, etc., looks like the Chitosan was left off. Maybe that why it’s so cloudy. Added chitosan, stirred and degassed. By the calculator the bottling should be Friday, April 17, 2020. I'll see how it clear from now.

  • Winexpert Vintners Reserve Viognier ( 100% Betsy) - the SG was just above the point at which we needed to stabilize ( 0.996 vs it was supposed to be blow that point) last time. It had fermented a fair amount. SG at. 0.990. Looks like the secondary fermentation approach sort of worked. Pushed through kieselsol, and then did the chitosan on 4/7/2020. Bottling should be 4/17 if it clears like it should.

  • Winexpert Island Mist Peach Apricot Chardonnay (100% Betsy) F-pack and then Chitosan were added. Then vacuumed down. The schedule says to bottle Friday, April 17, 2020, supposedly. Checked on 4/7 and it's almost clear enough to bottle now. Might just bottle on 4/10.

  • RJS En Primeur Australian Pinot Noir (50% Betsy, 50% Barbara) -Degass, stabilize and cleared so the only thing that’s left is a rack and then bottle. 42 day wine so target bottling is 4/24. This is another one that can clear in cooler temperatures so Tom will move for us.

  • RJS En Premier Chilean Chardonnay (100% Betsy) - Racked, degassed, stabilized, cleared and vacuumed down. Will probably need a rack or two but should be ready to bottle on the Friday, May 8, 2020, if it clears as it should. Also needs to come out into a cooler area.


It took awhile but I got a lot done. Cleaned up too, and went through some stuff in the basement. Went at the rug - and now that the padding is dried, a rinse cleaning seemed to leave it better.
